Quick Chicken Parmesan Bake

There are days I get home from work and have NO motivation to cook a fancy meal. I mean, do most busy individuals/ families cook fancy meals every night? Probably not. Don’t get me wrong, I like to ensure that I do one new recipe a week or so. But lots of days I am drained from work and I just want to hit a drive thru! Instead of having fast food, I decided to make something decently healthy that you can throw in the oven. A chicken bake! I like this meal because you throw everything in a dish, into the oven and you’re good to go. I used what I had in my fridge and came up with this bake. I served this with a garden salad but you could add pasta noods or whatever you want as a side!

Easy Chicken Parmesan Bake

Ingredients:

  • 4 boneless skinless chicken breasts
  • EVOO
  • Garlic powder
  • Italian seasoning
  • Pepper
  • Salt
  • Red chilli pepper flakes
  • Dry basil leaves
  • Sweet basil marinara sauce
  • Parmesan cheese
  • Shredded cheddar & mozzarella cheese

Directions

  • Pre-heat the oven to 400 F and lightly grease a baking sheet or casserole dish with EVOO. Marinate chicken breasts with the EVOO, garlic powder, Italian seasoning, salt and pepper, red chilli pepper flakes, and dry basil leaves.
  • Place chicken breasts on baking sheet/casserole dish. Pour marinara sauce on each chicken breast. Sprinkle Parmesan cheese and shredded cheddar/mozza cheese over top.
  • Bake chicken for 40-50 minutes- depending on when chicken is cooked through. Cheese should be bubbly. Enjoy!
